     Pourquoi mangeons-nous de la viande ? Parce que c’est… bon ?? Dans L’humanit\u00e9 carnivore<\/em>, son livre paru cette ann\u00e9e au Seuil<\/em>, Florence Burgat voit derri\u00e8re le pr\u00e9texte culinaire ou gustatif une tout autre raison. Alors que l’humanit\u00e9 peut vivre d’une alimentation enti\u00e8rement v\u00e9g\u00e9tale, elle tue et mange des animaux… pour se rappeler qu’elle s’en est s\u00e9par\u00e9e.<\/p>\n

 <\/div>\n

     Ces \u00eatres pas si diff\u00e9rents de nous, dont on n’a jamais \u00e9t\u00e9 aussi bien inform\u00e9s de l’intelligence et de la profondeur de la vie \u00e9motionnelle, nous les r\u00e9duisons \u00e0 n\u00e9ant de la mani\u00e8re la plus radicale. Abattage, d\u00e9coupage, commercialisation, consommation, mastication… ingestion… L’alimentation carn\u00e9e institutionnalis\u00e9e, syst\u00e9matis\u00e9e, universalis\u00e9e, coupe l’homme de la nature. Elle le rassure dans la conception qu’il a de lui-m\u00eame comme un \u00eatre absolument sup\u00e9rieur.<\/p>\n

     Florence Burgat montre comment, du sacrifice ancestral \u00e0 l’abattage industriel, les hommes ont choisi de maintenir une relation sanglante aux b\u00eates. Elle \u00e9voque la chasse au pal\u00e9olithique, les sacrifices d’animaux dans l’Antiquit\u00e9. Elle fait \u00e9galement un d\u00e9tour par le cannibalisme, qui met en lumi\u00e8re des choses que nous n’arrivons pas \u00e0 penser dans l’alimentation carn\u00e9e. Ce qui fait horreur dans le cannibalisme, ce n’est pas le crime. Mais c’est le fait qu’on puisse manger notre semblable. Car il y a dans la manducation (le fait de manger) de la chair de l’autre, une absence totale de reconnaissance.<\/p>\n

     Aujourd’hui, toute une industrie propose des produits v\u00e9g\u00e9taux parfaitement suffisants \u00e0 l’alimentation humaine. Mais si l’humanit\u00e9 mange de la viande, c’est pour manger les animaux et perp\u00e9tuer ainsi, aujourd’hui, un rituel symbolique. Une tr\u00e8s grande majorit\u00e9 ne souhaite donc pas sortir de cette relation sanglante.<\/p>\n

     C’est l\u00e0 qu’intervient, dans la r\u00e9flexion de Florence Burgat, le marketing, qui joue un r\u00f4le central. \u00c0 partir des simili-carn\u00e9s, ces produits v\u00e9g\u00e9tariens qui imitent le go\u00fbt de la viande, le marketing aurait \u00e0 convaincre les carnivores qui n’ont pas du tout envie de cesser de l’\u00eatre que cette boucherie continue, que la viande est toujours l\u00e0…<\/p>\n

     C’est ce que l’on pourrait appeler l’organisation d’un mensonge. Mais un mensonge en tous points comparable au mensonge actuel qui va dans le sens de la boucherie, et qui nous montre par exemple sur des paquets de fromage une ch\u00e8vre et son petit, alors que l’on sait bien que l’on tue les chevreaux pour avoir du lait…<\/p>\n

     Ou encore un sticker avec la t\u00eate d’un cochon jovial, apparemment ravi de s’\u00eatre fait d\u00e9couper en tranches (apr\u00e8s \u00eatre pass\u00e9 par les \u00e9tapes barbares de l’ “\u00e9levage” dit respectueux, et de l’abattage) pour notre plaisir souverain… Et surtout pour confirmer la tr\u00e8s haute id\u00e9e que l’Homme, cet \u00eatre d’exception si fragile, voudrait se faire de lui-m\u00eame.<\/p>\n
